Ingredients

  • 1 large egg
  • 110 g (3.9 oz) sugar
  • 10 g (0.35 oz) vanilla sugar
  • 1.5 tablespoons cornstarch
  • 350 g (12.3 oz) sour cream or Greek yogurt
  • 40 g (1.4 oz) butter

Instructions

Prepare the Filling:

  1. In a medium-sized saucepan, lightly beat the large egg.
  2. Add sugar, vanilla sugar, and cornstarch to the egg. Whisk the mixture until well combined and smooth.
  3. Gradually add the sour cream or Greek yogurt while continuously whisking until the mixture is fully integrated without lumps.

Cook the Filling:

  1. Place the saucepan over medium heat.
  2. Cook the mixture, stirring constantly to prevent sticking or clumping.
  3. Continue stirring until the mixture thickens to a pudding-like consistency, about 5-7 minutes.

Add Butter:

  1. Once the filling has thickened, remove the pot from the heat.
  2. Add the butter to the warm mixture and stir until the butter is fully melted and incorporated.

Cool the Filling:

  1. Pour the thickened filling into a bowl.
  2. Cover the surface of the filling with plastic wrap to prevent a skin from forming.
  3. Allow the filling to cool at room temperature.
