Ficelle Picarde

Ingredients:

  • Grated Gruyere
  • Salt
  • Pepper
  • 20 cl of crème fraîche
  • 4 slices of white ham
  • 4 pancakes
  • 500 g of fresh Paris mushrooms
  • Lemon

Preparation:

  • Total Time: 40 minutes
  • Preparation Time: 30 minutes
  • Cooking Time: 10 minutes

Instructions:

  1. Make Pancakes:
    • Prepare pancakes following the classic recipe without sweetening the batter. Set aside 4 pancakes.
  2. Prepare Mushroom Filling:
    • Wash the mushrooms and cut them into strips. Sauté them in a little olive oil until the juice disappears.
    • Add the crème fraîche, lemon juice, salt, and pepper. Simmer for 10 minutes over low heat.
  3. Assemble Ficelles Picardes:
    • When the mushroom preparation is lukewarm, assemble the ficelles picardes:
      • Place a crepe flat on a plate.
      • Add a slice of ham on the crepe.
      • Spread a quarter of the mushroom preparation in the center lengthwise.
      • Roll everything up and place in an ovenproof dish.
  4. Repeat with Remaining Crepes:
    • Repeat the same process with the remaining 3 crepes.
  5. Bake:
    • Sprinkle the ficelles with grated Gruyère.
    • Bake at 200°C (gas mark 5) for 10 minutes.
  6. Serve:
    • Enjoy the Ficelle Picarde while still hot.
