Apple Puff Pastry Recipe

Directions:

  1. Make the custard:
    • Whisk together the egg, sugar, cornstarch, and vanilla sugar in a saucepan. Gradually add milk while stirring. Cook until thickened, then stir in butter. Cool in the fridge.
  2. Bake the apples:
    • Melt butter in a pan, add sliced apples, sugar, and cinnamon. Bake until soft and caramelized. Let cool.
  3. Assemble the pastry:
    • Roll out puff pastry, cut into squares. Place custard and apple mixture in the center of each square. Fold over to form a pocket and seal edges.
  4. Bake:
    • Brush pastry with egg wash, sprinkle with almonds. Bake at 180°C for 20 minutes or until golden brown. Dust with icing sugar.
