Preheat oven: Preheat oven to 180°C (356°F).
Make the dough:
In a large bowl, whisk together the egg, pinch of salt, vanilla sugar and sugar until well combined.
Add the oil, cornflour and yoghurt and mix until smooth.
Sift in the baking powder and flour, mixing until the dough comes together into a soft dough.
Shape the dough:
Press the dough evenly into a greased or parchment-lined baking tin (approximately 20x20cm).
Add the filling:
Spread the apricot jam evenly over the dough.
Sprinkle the coconut flakes over the jam layer.
Bake:
Bake in a preheated oven at 180°C (356°F) for approximately 20 minutes or until the edges are golden brown.
Cool and garnish:
Allow the bars to cool completely in the pan.
Once cooled, dust with powdered sugar before cutting into squares.
