Cake Camembert Lardons

Instructions :

1. Preparation of the bacon

  1. Brown the bacon in a frying pan without adding any fat.
  2. Brown them until crispy.
  3. Drain the bacon on paper towels to remove excess fat.

2. Preparation of the cake batter

  1. In a large bowl , whisk the eggs with the milk and olive oil.
  2. Add the flour and baking powder, mix well to obtain a smooth dough.
  3. Add the cooked bacon, the diced Camembert and the grated Gruyere (if using).
  4. Season with salt, pepper, and a pinch of nutmeg, to taste.

3. Baking the cake

  1. Preheat the oven to 180°C (350°F).
  2. Pour the mixture into a buttered and floured cake tin, or one lined with baking paper.
  3. Bake for 40 to 45 minutes , until the cake is golden brown and a knife blade inserted comes out clean.

4. Rest and service

  1. Allow to cool slightly before unmolding.
  2. Serve warm or at room temperature , cut into thick slices.

  • This cake is ideal for a friendly aperitif or to accompany a green salad during a light lunch.
  • For even more flavor, add chopped nuts or herbs like thyme or rosemary.
