Instructions :
1. Preparation of the bacon
- Brown the bacon in a frying pan without adding any fat.
- Brown them until crispy.
- Drain the bacon on paper towels to remove excess fat.
2. Preparation of the cake batter
- In a large bowl , whisk the eggs with the milk and olive oil.
- Add the flour and baking powder, mix well to obtain a smooth dough.
- Add the cooked bacon, the diced Camembert and the grated Gruyere (if using).
- Season with salt, pepper, and a pinch of nutmeg, to taste.
3. Baking the cake
- Preheat the oven to 180°C (350°F).
- Pour the mixture into a buttered and floured cake tin, or one lined with baking paper.
- Bake for 40 to 45 minutes , until the cake is golden brown and a knife blade inserted comes out clean.
4. Rest and service
- Allow to cool slightly before unmolding.
- Serve warm or at room temperature , cut into thick slices.

- This cake is ideal for a friendly aperitif or to accompany a green salad during a light lunch.
- For even more flavor, add chopped nuts or herbs like thyme or rosemary.
