Crock Pot Green Enchilada Chicken Soup Recipe

Ingredients:

  • 1 and 3/4 pounds skinless, boneless chicken breasts
  • 1 can (28 oz) green enchilada sauce
  • 1 can (10 oz) chopped green chilies
  • 4 cups low-sodium chicken broth
  • 1 can (15 oz) white beans (cannellini or Great Northern), drained and rinsed
  • 1 cup corn (frozen or canned, drained)
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 brick (8 oz) cream cheese, cubed
  • 1 cup pepper jack (or Monterey jack and cheddar) cheese, shredded
  • Fresh cilantro for garnish
  • Optional toppings: shredded cheese, tortilla strips, avocado slices, lime wedges, sour cream
