Crock Pot Green Enchilada Chicken Soup Recipe

Cooking Time: Low heat: 4-6 hours, High heat: 2-3 hours

Ingredients:
- 1 and 3/4 pounds skinless, boneless chicken breasts
- 1 can (28 oz) green enchilada sauce
- 1 can (10 oz) chopped green chilies
- 4 cups low-sodium chicken broth
- 1 can (15 oz) white beans (cannellini or Great Northern), drained and rinsed
- 1 cup corn (frozen or canned, drained)
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 brick (8 oz) cream cheese, cubed
- 1 cup pepper jack (or Monterey jack and cheddar) cheese, shredded
- Fresh cilantro for garnish
- Optional toppings: shredded cheese, tortilla strips, avocado slices, lime wedges, sour cream
