- Preheat the Oven:

- In a bowl, whisk the eggs with the sugar until the mixture whitens and becomes frothy.
- Incorporate Flour and Baking Powder:
- Add the sifted flour and baking powder to the egg-sugar mixture.
- Mix gently until you get a smooth dough.
- Prepare the Butter:
- Melt the butter in a saucepan over low heat until it turns a hazelnut color (be careful not to burn it).
- Let it cool slightly.
- Incorporate Melted Butter:
- Mix the lukewarm melted butter into the madeleine dough, ensuring it’s well incorporated.
- Add Lemon Zest (Optional):
- If desired, add the grated lemon zest to the dough for flavor.
- Fill the Molds:
- Fill the madeleine molds 3/4 full with the dough.
- Baking:
- Bake the madeleines in the preheated oven for about 10 to 12 minutes, until golden on the edges and slightly rounded in the center.
- Cooling:
- Once done, let the madeleines cool slightly in the molds.
- Unmold and transfer them to a rack to cool completely.
