Meatloaf with Mashed Potatoes and Cheese


Directions:

For the Meatloaf:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Mix Ingredients: In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, chopped garlic, eggs, Worcestershire sauce, salt, pepper, and dried thyme. Mix until well combined.
  3. Shape the Meatloaf: Transfer the mixture to a baking dish or a loaf pan, shaping it into a loaf.
  4. Prepare Topping: In a small bowl, mix the ketchup and brown sugar together. Spread this mixture evenly over the top of the meatloaf.
  5. Bake: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).

For the Mashed Potatoes:

  1. Cook Potatoes: While the meatloaf is baking, bring a large pot of salted water to a boil. Add the peeled and chopped potatoes and cook until tender, about 15-20 minutes.
  2. Drain and Mash: Drain the potatoes and return them to the pot. Add the milk, butter, salt, and pepper. Mash until smooth and creamy.

For the Topping:

  1. Add Cheese: About 10 minutes before the meatloaf is done, sprinkle the grated cheddar cheese over the top. Return it to the oven and continue baking until the cheese is melted and bubbly.
  2. Garnish: Once done, remove the meatloaf from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley before slicing.
