Mini Chinese sponge cake

Instructions:

  1. Preheat your oven to 350°F (180°C) and prepare your mini cake molds.
  2. In a mixing bowl, beat the eggs and sugar together until light and fluffy.
  3. Sift in the cake flour and baking powder, and gently fold them into the egg mixture.
  4. Heat the milk and vegetable oil in a saucepan until warm, then pour this into the batter. Add vanilla extract if desired.
  5. Mix everything together until you have a smooth batter.
  6. Pour the batter into the prepared cake molds, filling each about 2/3 full.
  7. Bake for about 15-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Once done, let the mini cakes cool in the molds for a few minutes before transferring them to a wire rack to cool completely.
