Instructions:
- Preheat your oven to 350°F (180°C) and prepare your mini cake molds.
- In a mixing bowl, beat the eggs and sugar together until light and fluffy.
- Sift in the cake flour and baking powder, and gently fold them into the egg mixture.
- Heat the milk and vegetable oil in a saucepan until warm, then pour this into the batter. Add vanilla extract if desired.
- Mix everything together until you have a smooth batter.
- Pour the batter into the prepared cake molds, filling each about 2/3 full.
- Bake for about 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Once done, let the mini cakes cool in the molds for a few minutes before transferring them to a wire rack to cool completely.
