Follow these steps for a perfect result:
1. Preheat the oven
Start by preheating your oven to 200°C, to ensure ideal browning.
2. Brown the Aromatics
In a large saucepan, melt the butter and sauté the shallots and garlic until translucent.
3. Cooking the Mussels
Add the mussels and white wine, then cover. Cook until all the mussels have opened, which will take about 5 to 7 minutes.
4. Preparation of the Cassolettes
Remove the mussels from their shells and divide them into individual casseroles.
5. Prepare the Sauce
In a small saucepan, heat the crème fraîche and half of the grated Gruyere until the cheese melts. Season with salt and pepper to taste.
6. Assembly
Pour the creamy sauce over the mussels in the casseroles, sprinkle with breadcrumbs and the remaining Gruyere cheese.
7. Gratinage
Bake the casseroles for about 10 minutes, or until the top is golden and crispy.
