Step 1: Preparing the shortcrust pastry
- In a large bowl, mix the flour and salt. Add the pieces of butter and work them with your fingers until you get a sandy texture.
- Add the cold water little by little while continuing to mix, just enough to form a smooth ball. Do not overwork the dough so that it remains crumbly and light.
- Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes.
Step 2: Caramelizing the onions and cooking the bacon
- Heat the olive oil in a skillet over medium heat and add the sliced onions. Cook, stirring, until soft and golden, about 15 minutes.
- Add the bacon to the onions and continue cooking for 5 minutes until they are slightly crispy.
- Pour the honey over the onions and bacon, mix well and let caramelize for another 2-3 minutes. Remove from the heat and set aside.
Step 3: Assembling the Pie
- Preheat your oven to 180°C (thermostat 6).
- Roll out the shortcrust pastry on a lightly floured work surface and place it in a 24 cm diameter tart pan. Prick the base with a fork.
- Spread the onion and bacon mixture over the base of the pastry.
- Arrange the goat cheese slices evenly on top of the tart.
Step 4: Cooking
- Bake the tart for 25-30 minutes, until the pastry is golden brown and the goat cheese is melted and lightly browned.
- Let cool for a few minutes before serving so that the flavors can fully develop.
Tips and Tricks
- Accompaniment : Serve this tart with a green salad, garnished with walnuts and balsamic vinaigrette for a fresh and crunchy contrast.
- Variation : For a more intense flavor, add a pinch of fresh thyme or rosemary to the onions while cooking them.
- Advance Preparation : You can prepare the filling in advance and assemble the pie just before baking.
