Recipe for a healthy oatmeal and fruit dessert

Ingredients:

2 cups (200 g) rolled oats, crushed in a blender
1 teaspoon baking powder
1 cup (240 ml) milk of choice (cow’s or plant-based)
1 carrot, grated
9 dried apricots, rinsed with warm water and chopped
4 tablespoons raisins, rinsed with warm water
1 apple, grated
1 teaspoon cinnamon
3 eggs
4 tablespoons stevia or other sweetener of choice
1 teaspoon vanilla extract
2 tablespoons olive oil
7-inch baking dish
