Soft as a Cloud Cake

Ingredients:

  • 5 eggs
  • 16g baking powder
  • 200g caster sugar (1 1/2 cups)
  • 200g butter (about 1 1/2 cups)
  • 50g potato starch
  • 300g flour (about 2 cups)
  • A pinch of salt
  • 150g yogurt (about 1 cup)
  • Vanilla extract

Method:

  1. Blend Ingredients:
    • Put all the ingredients in a blender.
    • Blend for 3 minutes until well combined.
  2. Prepare Cake Tin:
    • Pour the batter into a 22cm cake tin.
  3. Bake:
    • Bake at 180°C (360°F) for 40 minutes.
