Instructions:

  1. Prepare the Strawberry Mixture:
    • Wash and hull the strawberries. Puree half of them in a blender or food processor.
    • In a saucepan, combine the strawberry puree and sugar. Cook over low heat until the sugar dissolves and the mixture thickens slightly. Let it cool.
  2. Whip the Cream:
    • In a bowl, whip the heavy cream until soft peaks form.
    • In another bowl, beat the cream cheese until smooth. Add vanilla extract and mix well.
    • Gently fold the whipped cream into the cream cheese mixture to create a light and creamy texture.
  3. Assemble the Pavé:
    • Line a loaf pan with plastic wrap, leaving some overhang for easy removal later.
    • Dip the butter biscuits in the strawberry mixture briefly and line the bottom of the pan with a single layer of biscuits.
    • Spread a layer of the cream mixture over the biscuits, followed by a layer of sliced fresh strawberries.
    • Repeat the layers until you reach the top of the pan, finishing with a layer of cream.
  4. Chill and Serve:
    • Cover the top with plastic wrap and refrigerate the pavé for at least 4 hours or overnight to set.
    • To serve, gently lift the pavé out of the pan using the overhanging plastic wrap. Slice and garnish with fresh mint leaves if desired.
