Tender Pork Tenderloin with Boursin

Preparation

1. Preheating the Oven

Preheat your oven to 180°C (350°F) for gentle, even cooking.

2. Preparation of the Meat

  1. On a large sheet of parchment paper, spread the pork belly slices, overlapping them slightly. Make sure that the total width of the slices matches that of the filet mignon.
  2. Fold the thinnest end of the filet mignon to obtain an even thickness.
  3. Spread a third of the Boursin in the center of the bacon slices, forming a creamy base.
  4. Place the filet mignon on top, then spread it generously with the remaining cheese, making sure all sides are well coated.
  5. Fold the slices of breast over the filet mignon, completely enveloping the meat for juicy cooking.

3. Cooking

  1. Wrap the filet mignon in parchment paper, creating a papillote that will preserve all the flavors.
  2. Place the package in a baking dish and bake for 1 hour .
  3. After an hour, open the papillote, increase the oven temperature to 200°C (400°F), and continue cooking for an additional 15 minutes to brown the bacon.

4. Service

Remove the filet mignon from the oven, slice it delicately and serve it with seasonal vegetables or mashed potatoes. Add a touch of freshness with a green salad if you like.

  • Cheese Variation : Substitute any other soft cheese, such as fresh goat cheese, for the Boursin for a different flavor.
  • Vegetarian Option : Substitute a large zucchini or tofu for the filet mignon for a tasty vegetarian version.
  • Storage : Leftovers will keep well in the fridge for 2-3 days. To reheat, wrap again in parchment paper and place in the oven at 180°C until heated through.
